DAY 02.

Day numero dos. So today I did what all people SHOULD NOT DO. I skipped breakfast. I know I know, but I was running late all morning and it was 2:00 before I realized I hadn't eaten anything! But I did snack on some pretzels!! =)

Anyway, I LOVE LOVE LOVE baked potatoes. And everyone knows that the BEST part of a baked potato is the sour cream you spoon on top and bacon, cheese, green onions, butter, etc! Totally not vegan-friendly. I made a few adjustments and it was pretty yummy! I did omit the bacon and cheese and didn't bother to find any alternatives for them, lol. I did actually want to put green onions but didn't have any handy. It's okay though, no risk of salmonella here!!

What I did do was use vegan butter which tastes just like regular butter but not as salty, and plain unsweetened SOY yogurt instead of sour cream. I watch a lot of cooking shows and they usually show yogurt as an alternative to sour cream so when I found a soy yogurt I thought I could use it for various things and it happened to work in this case.

The butter was made by "Earth Balance" which makes a variety of vegan/natural spreads

The yogurt, which I actually found at Grocery Outlet for WAAAYYYYY cheap, was made by "WholeSoy & Co" and it's apparently a new product according to the website

Here was the final product that I just seasoned with a little salt and pepper, topped with a little vegan butter and soy yogurt. It was a good version of the original... I PROMISE! =)



One of my fave alternatives to meat when I went vegetarian last year was protein/soy burgers!! I really liked the "Morningstar" brand products because they taste JUST like burgers. I already don't eat much red meat so these were perfect.

For dinner I made a burger using "Morningstar" Vegan Grillers

and I sauteed some onions, mushrooms and zucchini to add to it. It was really good and this was the finished product =)
