SNACK ATTACK!

Most potato chips are already vegan mostly containing potatoes, salt and some kind of oil; usually canola or vegetable.

Anyway, if I wasn't going TRULY vegan I suppose these would suffice. HOWEVER, a great way to snack on chips but make them even BETTER for you??

KALE CHIPS!

These are a cinch and totally great for someone with a time limit.

First pre-heat your oven to 350 degrees. Then get your Kale ready and start tearing them into bit-size pieces directly into a salad spinner.




Even though salad spinners get out a lot of moisture, you want these to be really dry so that they get crisp. Use a towel to remove any excess moisture.




Then line a baking sheet with parchment paper (so it's easy clean up and so it doesn't stick) lay the pieces of kale in a single layer on the pan, drizzle with olive oil and season with a little kosher salt.



Put them in the oven for 10-15 minutes until just the edges start to turn a little brown and crisp up.



These are easy to make and yummy!!! Just like potato chips you can't eat just one!!
